Pancake Tuesday

The Roe Park Resort’s award-winning chef Emma Gormley shares her exclusive recipe for a classic pancake stack – just in time for Pancake Tuesday. You can call them crepes, battercakes, griddlecakes or even drop scones but at the Roe Park they’ll always be good old pancakes! 

For this recipe you’ll need:·        

- 250g of plain flour
- 2tbs of baking powder
- 100g caster sugar
- 300ml full fat milk
- 1 egg
- Pinch of salt 1

1. Sieve the flour and baking powder and salt into a bowl; add the sugar milk and egg mix until a smooth batter. If you want to make the pancakes just a little more decadent - substitute a little of the milk with a dash of double cream.
2. Heat a griddle or heavy bottom frying pan until moderately hot - not smoking.Grease lightly with butter.
3. Pour a small amount of batter into the pan and let it spread, don’t turn over until you see little air bubbles appear on the top surface of the pancake.
4. Quickly flip over with a spatula or palette knife, leave for about 2 mins then take off and place on a serving plate to keep warm. Repeat until all the batter is used.

- Fresh berries with clotted cream
- Chocolate sauce and bananas
- Maple syrup and crispy bacon
- And never forget good old sugar with a squeeze of fresh lemon!
